-500g/17oz Oyster mushrooms
-salt
-pepper
-150g/5oz plain flour
-2 eggs
-a cupful of milk
-a cupful of water
-1 tbsp. chopped parsley
-oil for deep frying
Season the mushrooms with salt and pepper. For the batter, mix the plain flour, salt, eggs, milk, water and parsley together in a large bowl.
Heat an electric deep fat fryer or a deep, heavy-bottomed saucepan half-full with oil. Dip the mushrooms into the batter until thoroughly coated.
Drop the battered mushrooms into the oil to cook until golden.
Serve with some salad, mash or garnish to taste.
